Roastery
We opened as a roastery and expresso bar in Newtown in October 2004. We differed to other companies in Aotearoa in that our entire range of coffee is certified Fairtrade coffee.
We roast all our coffee at our boutique roastery in Newtown. The green beans arrive in giant hessian sacks from our co-operatives across the world in Peru, Colombia, Mexico, Indonesia and Ethiopia.Unroasted beans have got all the good stuff: acids, protein and caffeine, but none of that delicious taste. With the careful application of heat, the flavours are released.
The beans are transferred into our Probat roaster, a horizontal rotating drum that spins the coffee beans in hot combustion gases between 88 and 282 degrees. As the beans are roasted, they expand to nearly double their original size, turn brown, then a rich oily colour. A mouth watering smell fills the roastery and wafts out onto the streets of Newtown.
The coffee is then bagged up and shipped out to cafes and customers nationwide.
